Purchasing freeze-dried emergency foods that won't be sent for 8 weeks

Is anyone here foolish enough to do what I recently did--wait until the end of February before finally putting in orders to a couple of places I have no reason not to trust for some freeze-dried foods? In each case, I knew there would be a waiting period before the buckets of food could be sent. What I hadn't figured on was, having my credit cards charged immediately, show the pending charges the very next day, then having all those charges show as having gone through just one day later!

I've ordered things before where there was a waiting period--my credit cards were not actually charged until the day my orders got filled, though. Why did I think this would work the same way? Under the circumstances, I have to wonder what happens if I go ahead and pay the bills in full (I do pay credit card charges in full every month, to avoid finance charges) , but for some reason, the buckets of food never arrive, or maybe can't even be sent at all?

It's not that I think the places I ordered from would do anything 'wrong' to me on purpose. It's just that it makes me incredibly nervous, thinking of paying out over $1,000 in total for food that I might never receive. I feel I can afford that much, for a reasonable amount of freeze-dried foods to add to my canned goods prepping, but I sure can't afford to just lose that much for no reason.

All I have right now are 'authorization' codes, proving that the orders were received and will be processed in due time. Maybe what bothers me most is, what IF this doggone 'virus' (I can think of better names for such a monstrosity) stops everything by mid-April, including mail and package services? Am I worrying needlessly here?

If anyone else has dealt with something similar to this, I'd sure appreciate hearing from you. :unsure:
